A seven-day maceration at controlled temperatures between 22 ° – 28 °, in which the skins give color, aromas and tannins to the must, precedes the alcoholic fermentation in steel vats.
This second fermentation, always in steel tanks, makes Tumà more rounded and pleasant.
Tumà spend three months in steel tanks.
Elegant and delicate nose, which with intensity brings to hints of Mediterranean scrub and red fruits among which the blueberry stands out; spicy returns close the characteristic olfactory bouquet of Tumà.
Full and persistent sip, with a rounded and elegant tannin a
balance its warmth and softness; memories of ripe red fruits and notes of licorice caress the palate in what is a generous and fine puff.
